This course will cover the basic skills of cookery and students will learn simple recipes for starters, main courses, vegetables and puddings, cakes and biscuits. You will build a portfolio of recipes for home cooking and entertaining. Emphasis will be made on safety in the kitchen and working independently as well as with others.
Learners with little or no experience (including learners with learning or other disabilities) who would like to learn basic cooking skills and health & safety in the kitchen.
No previous experience is necessary just an enthusiasm to learn about kitchen skills and how to cook.
• Plan and prepare a nutritious 3-course meal using a variety of cooking methods. • Develop a portfolio of recipes for home use. • Understand and put into practice health & safety regulations when working in a kitchen and with food.
There will be demonstration of each new technique. You will have a choice of recipes for 2 dishes including starters, main courses and desserts each week from which you will select one or two recipes to make in class. You will be supported to make your dishes by the tutor.

Continue with this course or join another course within the curriculum to continue to build on skills learnt and develop more confidence.
Stout shoes to be worn and hair tied back or covered. Although aprons are provided, students are welcome to bring their own. Learners should bring lidded containers in which to take home their cooked food. Some dishes will be eaten in class.
Help with literacy or numeracy is available through the basic education programme and the ESOL programme offers help for speakers of other languages. Additional support can be provided for students with learning difficulties and/or disabilities. Details are available from the guide and from teaching or reception staff. Specialist aids are also available such as hearing loops, wheelchair friendly surfaces
